Description
The Franciacorta Ca’ del Diavolo Rosé Brut is a Metodo Classico produced exclusively with Pinot Noir grapes. The label of this Franciacorta features one of the 72 seals from the Lesser Key of Solomon, an ancient medieval grimoire also known as Lemegeton. This collection of esoteric texts describes a series of magical symbols used to summon and command spiritual entities. This cuvée is dedicated to Zepar, known for his ability to manipulate emotions and feelings, paired with a Franciacorta Rosé that stirs passion and desire with every sip.
Harvested by hand around mid-August, the grapes are meticulously selected before vinification. They are gently pressed to obtain the free-run must, which then undergoes fermentation at low temperatures to best preserve the aromas. After fermentation in stainless steel, the wine ages for 6 months before the second fermentation in the bottle. The wine then rests a minimum of 24 more months on the lees, followed by further bottle aging after disgorgement.
With a bright pink color and a fine, persistent perlage, it reveals delicate floral notes of rose and red fruits like strawberry and raspberry on the nose, followed by characteristic hints of yeast and bread crust with a touch of brioche and toasted almond. On the palate, it is fresh and intriguing with an excellent balance between exuberant fruit notes and the acidity, resulting in smoothness and long persistence.
Serve chilled at a temperature between 6°C and 8°C. It pairs perfectly with dry pastries and bakery sweets, but can also be served with fresh cheese and crostini.
