Description
What type of wine is it
Tenuta Villanova’s Sauvignon is a dry white wine made exclusively from Sauvignon grapes. Complex on the nose, it has a full yet fragrant and saline palate, with a freshness that makes it versatile at the table.
Where it comes from
It originates in the Collio area of Friuli, on Eocene-origin soils resting on the ponca, the marl–sandstone substrate typical of the area. The estate is based in Villanova di Farra, in the province of Gorizia, and includes an architectural complex whose origins date back to 1499. The Grossi family has been making wine in the Collio Goriziano and along the Isonzo since the 1930s, and this Sauvignon has been produced since 1964.
How it is made
The Sauvignon grapes, trained to Guyot, are hand-harvested. The wine ages for 6 months, mostly in stainless steel and partly in oak tonneaux, with bâtonnage on the lees. This work on the lees lends roundness to the palate and keeps the freshness precise.
Tasting notes
In the glass it shows a yellow hue with just a hint of green highlights. The aromas are a continuous evolution of well-integrated floral and vegetal essences, with notes from mint to elderflower. The palate is full yet fragrant and saline.
Food pairing
It pairs well with asparagus, creamy vegetable soups and risottos. Its fragrance shines with roast fish. It also stands up to delicately spiced and mildly hot dishes, and accompanies goat cheeses harmoniously.
When to serve it
A white suited to the aperitif and to light meals, from seasonal vegetables to first courses and fish.
