Description
The Ghemme Collis Breclemae from the winery Antichi Vigneti di Cantalupo is made from Nebbiolo grapes grown on selected slopes of the Breclemae vineyard, at an altitude between 280 and 310 meters. This red wine from Piedmont represents an expression of extraordinary elegance and intensity, born from a unique terroir and traditional skillful winemaking.
The harvest is carried out manually in the second half of October. After destemming and crushing, fermentation takes place at a controlled temperature between 28 and 30°C. From the second day, two daily manual punch-downs are performed to extract anthocyanins and tannins. The wine ages for over two and a half years in Slavonian oak barrels, followed by further aging in the bottle in a lying position.
It exhibits a ruby red color tending towards garnet. The bouquet is enveloping, with notes of licorice, violet, red forest berries, and subtle spiciness. On the palate, it is fine, velvety, and persistent, with soft tannins enhancing the structure and a harmonious fullness.
Ideal with braised dishes, stewed game, and strongly flavored aged cheeses.
