Description
Château de Respide Callipyge was born in vineyards located in the municipality of Roaillan, in the heart of the Graves AOC.
It is produced with Cabernet Sauvignon, Merlot and Petit Verdot grapes, harvested only by hand. Fermentation takes place in half new oak barrels. Subsequently the wine ages in oak barrels on the fine lees, with frequent batonnage.
Château de Respide Callipyge has a bright golden yellow color. The nose opens with a rich and intense bouquet, with hints of vanilla on a background of coconut and toasted bread. On the palate it is fresh and balanced, with hints of linden flowers and exotic fruit in the finish.
Perfect to accompany grilled fish and white meats, this wine is ideal in combination with hard cheeses, such as Comté, Appenzeller or Gruyere.
