Description
Bosco del Sabato's Aglianico is a pure Aglianico from the hills of Irpinia, distinguished by a beautiful ruby red color with violet highlights.
The vinification process includes a pre-fermentation cold maceration to enhance the extraction of aromas and color, followed by a temperature-controlled fermentation for about fifteen days. It is then refined mainly in steel, with a brief period in French oak barriques.
On the nose, hints of red fruits such as cherry, black cherry, and blackcurrant emerge, with intriguing spicy notes. On the palate, it is soft and harmonious, with a pleasant intensity that culminates in a finish featuring wild blackberry and cherry purée.
It is perfect with appetizers, first courses, red meats, and aged cheeses.
