Description
The Cibolo Organic Monastrell is an organic red wine produced in the southeast of Spain. It is made from 100% Monastrell grapes sourced from the oldest vineyards of Bodegas Alceño, cultivated on limestone and stony soils, at an altitude between 600 and 800 meters. Yields are very limited, ensuring aromatic concentration and structure.
The winemaking process involves 9-10 months of aging in French and American oak barrels, which allows the wine to develop complexity and harmony while preserving the varietal character of the Monastrell.
In appearance, it has an intense cherry color. On the nose, it offers aromas of ripe fruit well integrated with notes of new wood and hints of vanilla. On the palate, it is extremely expressive, balanced, full-bodied, and with a long persistence that enhances the combination of structure and smoothness.
Perfect to pair with red meats, grilled dishes, ribs, or spicy dishes.
