Description
The Montefalco Rosso Volo del Falco by Tenute Baldo is a wine that arises from the meeting of Sangiovese and another native red grape, an authentic expression of the Umbrian territory. The grapes, cultivated on the hills of Montefalco, are carefully selected to create a lively and harmonious wine, capable of combining structure and elegance.
The harvest is done manually with a careful selection of the bunches, followed by vinification at controlled temperature with spontaneous fermentation. The 15-day maceration allows for the best extraction of color and aromas, while malolactic fermentation in steel gives softness to the sip. Aging continues for 18 months in steel, followed by an additional resting period in the bottle of about 3 months.
With a bright purple-red color, it is characterized by an intense and immediate bouquet, with notes of berries such as blueberry, raspberry, and fresh cherry. Alongside these aromas are delicate vegetal nuances and a subtle spiciness of black pepper. On the palate, it is lively and fresh, with a decisive entry and a harmonious tannic texture, culminating in a pleasantly savory and persistent finish.
It pairs perfectly with flavorful first courses, white meats, and semi-aged cheeses.
