The Vino Nobile di Montepulciano "Asinone" by Poliziano is a Tuscan red made exclusively from Sangiovese grapes. Where it comes from
The grapes come from vineyards located in the municipality of Montepulciano, in Tuscany. Manual harvesting allows for a careful selection of the bunches destined for this label, which represents one of the most concentrated expressions of Sangiovese grown by the estate in this area.
How it is made
Fermentation takes place in stainless steel tanks at controlled temperature for a period of twenty to twenty-five days, in order to favor a precise extraction of phenolic components. The wine then ages in barrique for sixteen to eighteen months before bottling, a process that builds the wine’s tannic structure and aromatic depth.
Tasting notes
It shows a bright ruby red color. The nose opens with floral hints of morello cherry and violet, enriched by spicy notes of bay leaf, rhubarb, coffee and cinchona. On the palate it is pleasantly tannic, full and persistent, with a coffee-tinged finish.
Food pairings
This Nobile di Montepulciano is perfect with pasta dishes with meat ragù and roasts. It pairs just as well with stews, game and aged cheeses, where its tannic structure finds a natural balance with more intense flavors.
