Where it comes from
The Can Sumoi vineyards are located on the slopes of the Montmell Mountains, at about 600 meters above sea level, in the heart of Penedès. The calcareous and raw soils endow the wine with a marked mineral and saline note. The altitude supports a slower ripening of the grapes and contributes to a fresh structure with gustatory tension that reflects the identity of the high hill vineyards.
How it is produced
After destemming, the grapes undergo gentle pressing in an inert atmosphere. Fermentation takes place in stainless steel at a controlled temperature with indigenous yeasts, without filtration or stabilization. Malolactic fermentation develops spontaneously and provides a balanced structure. The absence of barrels enhances the freshness and transparency of the aromatic profile.
Tasting notes
Visually, La Rosa shows a pale pink color with bright reflections. The nose reveals floral notes of rose petals and small red fruits, with a hint of flinty minerality. On the palate, it is slender and lively, with well-integrated acidity and a persistent finish recalling cherry, raspberry, and a light savoriness, true to the calcareous terroir.
Food pairings
This rosé pairs easily with grilled fish dishes, shellfish, and seafood salads. The saline component enhances dishes like suquet de peix, while the freshness matches well with Mediterranean octopus salads. Among cheeses, it is ideal with fresh goat cheese.
