Description

NovantaCeppi Rosso Appassimento by Latentia is a red wine made from red-berried grape varieties of Apulian origin, with grapes left to dry directly on the vine. The style is rich, smooth and enveloping, with a slight residual sweetness that enhances its fullness.

On-the-vine drying promotes the natural concentration of sugars, aromas and extractive compounds, yielding an intense, structured wine. Vinification is geared towards preserving fruit maturity and the spicy component, highlighting softness and complexity.

In the glass it shows a deep red color with garnet highlights. The nose reveals black cherry, vanilla, dried fruit, chocolate and spices, while the palate is full-bodied, warm and enveloping, with a smooth, lingering texture.

It pairs well with first courses featuring game, meat mains, cheeses and cured meats.
