Description
The Albariño Cos Pés is a macerated white wine produced by Bodegas Forjas del Salnés in Galicia from Albariño grapes grown on granite-sandy soils. The vines have an average age of about 40 years and are cultivated manually, with particular attention to expressing the most natural and artisanal character of the origin territory.
The winemaking process involves spontaneous fermentation in stainless steel vats for 15 days, using half whole clusters with stems and half destemmed. This is followed by a long maceration on the skins for about a month and a half without temperature control, which gives the wine depth, grip, and structure. The wine is aged for 12 months in fourth-pass barriques, and the malolactic fermentation is not carried out to preserve freshness and tension.
The aromatic profile is complex and distinctive, with notes of Mediterranean herbs, orange peel, sweet spices, and light tannic hints. On the palate, it is structured, savory, and enveloping, with a saline component and a good acidic backbone that makes it long and persistent.
It pairs successfully with spicy fish dishes, grilled white meats, or aged cheeses.
