What kind of wine it is
Lapola by Dominio do Bibei is a white wine from Ribeira Sacra in Galicia, made from Godello, Albariño, and Doña Blanca grapes. The vinification combines fermentation in concrete and wooden foudre, with aging that alternates between barrique and stainless steel for a crisp profile. In the glass, it offers freshness and drive, a creamy texture, and a persistent mineral finish, with a balance between acidity and volume that makes it versatile at the table.
Where it comes from
Lapola originates in Ribeira Sacra, where the vineyards are often set on steep slopes and in parcels that are difficult to work. The grapes come from vines on schist soils aged between 15 and 80 years, a detail reflected in tension and savoriness. The manual harvest allows careful selection of the fruit, in keeping with the region’s growing conditions.
How it is produced
After manual harvesting, the grapes are fermented in concrete tanks and wooden foudre. The wine ages for 7 months in French-Austrian oak barriques and then for 6 months in stainless steel. The choice to work without stabilization or filtration aims to preserve the wine’s characteristics; the time on fine lees helps add aromatic complexity and a more enveloping sensation on the palate.
Tasting notes
It appears luminous and pale in color. On the nose, you’ll find lemon and lime, followed by white fruits, floral nuances, and hints of wild herbs. On the palate, it’s fresh and smooth, with a creamy texture supported by well-balanced acidity; the finish is long, with a clear mineral impression.

It pairs naturally with appetizers and seafood, thanks to its freshness and mineral finish that cleanses the palate.
