Description
Doroteo is a red wine that originates from a historic plot cultivated since the 1920s within the Pago de los Capellanes estate, located in the municipality of Pedrosa de Duero. Situated adjacent to the winery, this vineyard was tended for decades by Doroteo Rodero, the founder's father. The resulting wine embodies memory, continuity, and a deep connection with the land, expressing elegance, power, and harmony.
The Tempranillo grapes come from century-old vines grown on clay-limestone soils with gravel on the surface, characterized by very low fertility. Harvesting is done manually in boxes with the grapes being cooled for 24 hours. This is followed by a six-day cold pre-fermentation maceration, spontaneous fermentation in small French oak vats, and malolactic fermentation in barrels with periodic bâtonnage. Aging takes place for 27 months in extra-fine-grained French oak barrels aged for 60 months.
It presents an intense cherry red color to the sight. The olfactory profile is rich and clean, with aromas of ripe black and red berries like blackberry, cherry, and blackcurrant, accompanied by balsamic notes of licorice and hints of wild herbs. The wood imparts an elegant spiciness with hints of cinnamon and cloves. On the palate, it is fresh, silky, and powerful, with lively and well-polished tannins and a long persistence that leaves a deep sensory imprint.
Ideal pairing with important red meats, grilled filet, oven roasted game, or aged and intense cheeses.
