Description
Se by Gianfranco Fino is a Primitivo produced in the Manduria area, in Puglia, from vineyards cultivated with traditional Puglian sapling on clayey-limestone soils. The Mediterranean climate, with the sea breeze from the Ionian and the warm sun of Puglia, lends the wine intensity and aromatic richness, while maintaining a pleasant freshness.
The harvest is carried out manually with careful selection of the bunches, transported in refrigerated trucks to preserve their integrity. After destemming and soft pressing, the must macerates with the skins for two to three weeks in stainless steel tanks, with temperature control and daily délestage. Pressing takes place with a vertical hydraulic press and the wine ages for about nine months in wood, followed by an additional six months of refinement in the bottle.
It presents itself with an intense ruby red color. The bouquet is broad and enveloping, with notes of red berries such as cherries and forest fruits, enriched by intense hints of Mediterranean scrub. On the palate, it offers a sip of great impact, smooth and velvety, characterized by perfect balance and well-integrated freshness.
It pairs best with meat-based first and second courses.
