Description
The Liante di Castello Monaci obviously has Apulian origins. It takes its name from the Levante wind that blows strongly on the Adriatic regions, especially in Puglia, so as to evoke even more the belonging to these lands.
It is mainly produced with Negroamaro grapes and with Malvasia Nera di Lecce grapes, native Apulian vines, collected and vnified separately for their different ripening period: first the Negroamaro, then the Malvasia. The assembly takes place after malolactic fermentation, with the wine aging partly in French barriques, partly in steel.
The Liante has an intense ruby red color. The nose is of excellent complexity and depth, with notes of dried plum, morello cherry jam, chocolate and vanilla. In the mouth it shows a vigorous and harmonious flavor, with notes of ripe fruit and spices that end in a balsamic and almondy finish.
It goes very well with roasts and stewed meats. It is ideal with aged cheeses.
