Description
What kind of wine is it
Tasca d'Almerita’s Didyme is a dry white wine made from Malvasia delle Lipari grapes. Produced at Tenuta Capofaro, in the Aeolian Islands, it stands out for its good acidity, which highlights its salinity. Notes of aromatic herbs and flowers recall the island’s Mediterranean scrub, yielding a wine with character that expresses the volcanic terroir in its purest form.
Where it comes from
The grapes grow on the island of Salina, within Tenuta Capofaro of Tasca d'Almerita. The name Didyme is the ancient name of Salina, the wine’s geographic reference. The soils are of volcanic origin, with a loose, sandy, well-drained texture, high porosity, and a good capacity to retain water.
How it's made
The Malvasia delle Lipari is harvested at the right degree of ripeness and vinified immediately to preserve its aromas. Fermentation takes place in stainless-steel tanks and includes about fifteen days of skin contact. Malolactic fermentation is not carried out, while ageing lasts four months in steel on the lees.
Tasting notes
The nose offers aromatic herbs and flowers, evoking the Mediterranean scrub. On the palate it is dry, with good acidity that supports the sip and brings out its salinity. The result is a fresh, vibrant white with a mineral character that speaks of the volcanic land it comes from.
Food pairings
Naturally pairs with seafood dishes: raw fish, oily fish, spaghetti with clams, and light fried dishes. The notes of aromatic herbs match well with grilled vegetables, caponata, and preparations based on capers and olives. It also goes well with fresh cheeses and baked fish dishes.
When to serve it
It’s the right white for seafood lunches and dinners, summer aperitifs, and any occasion that calls for freshness and salinity. A white wine glass enhances its herbal and floral aromas. Best enjoyed young, when acidity and salinity are at their clearest expression.
