Description
Produced by Chanterêves, a winery founded in 2010 by Tomoko Kuriyama and Guillaume Bott, this Pinot Noir comes from the "Les Godeaux" climat, located on a gentle south-facing slope at about 360 meters altitude. The soil is characterized by a stony surface layer with underlying marls, giving the wine expressiveness and minerality. The vineyard is managed following uncertified biodynamic practices, with an approach that respects the environment and biodiversity.
The winemaking involves spontaneous fermentation with whole clusters, without temperature control, using indigenous yeasts. Aging occurs in used oak barrels, avoiding the use of new wood to preserve the purity of the fruit. The enological intervention is minimal, with very limited use of sulfites and no filtering, in order to maintain the wine’s integrity and authenticity.
On the nose, it opens with fresh and elegant notes of red and black fruits. On the palate, the wine shows depth and refined structure, with an airy quality resulting from whole cluster fermentation. The tannins are delicate, giving the wine pleasant accessibility and complexity.
Ideal pairing with meat dishes such as braised beef, grilled entrecôte, or pork tenderloin with porcini mushrooms.
