What kind of wine is it
Inessa’s Nero d'Avola is a red wine made exclusively from Nero d'Avola grapes, grown on the slopes of Etna at an average elevation between 350 and 900 meters above sea level.
Where it comes from
The grapes come from the high-altitude vineyards of Etna, a volcanic terroir that distinctly shapes the profile of Nero d'Avola. Harvest takes place in early September.
How it's made
Once at the winery, the grapes undergo a cold pre-fermentation maceration at 0–4°C for 4–6 days. This is followed by alcoholic fermentation at controlled temperature up to 24°C for 10–14 days, a step designed to enhance the grape’s most fruit-forward components.
Tasting notes
It shows an intense ruby red color. On the nose it opens with delicate hints of wild berries, blackcurrant and cherry jam, finishing on notes of wild myrtle. On the palate it shows good density, with red fruit returning, a sturdy structure and a touch of rose and violet, softened by supple tannins that carry a long, pleasant finish.
Food pairings
Ideal with pasta dishes dressed with meat-based sauces, and it pairs notably with red meats, beef tagliata and filet with green peppercorn sauce. It also goes well with a board of semi-hard cheeses.
When to serve
With its solid structure and supple tannins, serve at 16–18°C, for convivial occasions where grilled red meats or green peppercorn dishes take center stage. A brief time to breathe before pouring further softens the palate feel, enhancing the wild-berry notes on the nose.
