Description
This Soave from Sandro De Bruno is made exclusively from Garganega grapes grown on volcanic soils in the hilly region of Roncà, in the Montecchia di Verona area. The vineyards, located between 80 and 150 meters of altitude, benefit from a southern exposure and a favorable microclimate that allows for balanced ripening. The volcanic composition of the soil gives the wine a pronounced mineral personality and an elegant aromatic structure.
The grapes are harvested manually between the third and fourth week of September. After destemming, cold maceration takes place in a closed press for at least 12-18 hours, followed by gentle pressing in a nitrogen-saturated environment. The must is clarified before fermentation, which takes place in steel. At the end, the fine lees are kept in suspension with weekly bâtonnage for a period of 5-6 months, enhancing complexity and richness of taste.
In appearance, it presents a bright straw yellow color with greenish highlights. The bouquet is intense, defined by fruity notes of yellow peach, lime, and almond, accompanied by floral scents of linden, acacia, and daffodil. Mineral nuances also emerge, along with aromatic herbs like sage and thyme, and delicate hints of honey and Mediterranean scrub. On the palate, it is dry, enveloping, and well-balanced, with a decisive sapidity and a citrus freshness that enhance its drinkability.
Perfect as an aperitif or paired with fish-based dishes, it is particularly recommended with seafood risottos, baked fish, poke, and carpaccio.
