Origin

The grapes come from the renowned Da Capo vineyard, located near Sir Lowry’s Pass in the Helderberg region, within the Stellenbosch district. This area is characterized by soils composed of decomposed granite, Table Mountain sandstone, and Tukulu, an ideal combination to support the structure and aromatic depth of the grapes. In this unique geographical context, the wine fully expresses its intensity. The origin certifies the character of an area highly suited for wines of great expression.

Production method

After harvest, the grapes undergo six days of cold maceration to encourage a controlled extraction of the noble compounds. The subsequent fermentation takes place in stainless steel tanks at a temperature maintained between 24 and 28 degrees Celsius and lasts about a week and a half. At the end of this process, the wine is aged for fourteen months in French oak barriques, using a proportion of new oak. This precise targeted aging process serves to integrate the aromatic profile and ensures balanced maturation.
