Description

The Pinot Grigio from the Linea Classica of Abbazia di Novacella is an elegant white wine produced in the Bressanone Basin, in Alto Adige. The vineyards are situated between 600 and 700 meters above sea level on permeable moraine soils composed of mica schist, paragneiss, and quartzite, with mainly south and southeast exposures; the vines benefit from the particular alpine climatic conditions that promote freshness and aromatic finesse.

The winemaking process involves fermentation split between stainless steel and large-capacity oak barrels. About three quarters of the must ferments and matures in steel to preserve freshness and aromatic purity, while a portion is aged in wood to add structure and complexity. The wine then undergoes a maturation period that helps develop balance and harmony.

In the glass, it displays a color ranging from greenish yellow to straw yellow. On the nose, delicate scents of honey, pear, and banana emerge. On the palate, it is full and structured, with light nutty nuances and a balanced, persistent finish.

It pairs well with dishes such as game terrines on baby lettuce with walnut sauce, potato ravioli stuffed with fresh cheese, and fish preparations like sesame-crusted halibut.
