Pinot Nero Dignus from Ritterhof’s Crescendo line is a still red wine made from selected Pinot Noir grapes. Its style is characterized by elegance and structure, with pure fruit and a fine tannic texture. Vinification involves fermentation in open vessels and maceration on the skins, followed by aging in French oak barrels, giving the wine aromatic precision and depth of flavor. The project aims for evolution in the bottle, maintaining a balance between intensity and finesse.
Where it comes from
The grapes come from estate-owned vineyards in the municipality of Montagna, Alto Adige, a renowned area for Pinot Noir. Local conditions favor clean aromas and good acidity; the territory contributes to a refined profile, with spicy notes and red fruit.
How it is produced
Production begins with a careful selection of fully ripe Pinot Noir grapes. Fermentation takes place in open containers with skin contact to extract color, aromas, and tannins in a controlled manner. After fermentation, the wine ages for 14 months in French oak barrels and then rests 10 months in bottle, so structure and aromas achieve harmony.
Tasting notes
It shows a bright garnet red color, with the typical transparency of the grape variety. The nose reveals sweet spices, raspberry, and cherry, with toasted nuances from the oak. On the palate, it is full and juicy, with an elegant entry, well-present acidity, silky tannins, and a persistent finish on red fruit and spicy hints, balanced between intensity and finesse.
Food pairings
It pairs easily with flavorful first courses and supports rich sauces without overpowering the fruit. It matches well with red meats, feathered game, and semi-aged cheeses. In South Tyrolean cuisine, it works with speck dumplings or braised venison, while in Italian tradition, it enhances a porcini mushroom risotto. When to serve it
Ideal at 16–18 °C in a large glass, with a few minutes of aeration to unfold the spicy notes and integrate the wood.
