Description

What type of wine is it

Peter Dipoli's Sauvignon Voglar is a white wine made from Sauvignon Blanc grapes from Alto Adige. This label comes to life in the Voglar vineyard, located in the Penon area in the municipality of Cortaccia, offering an authentic expression of the local terroir. The winemaking process involves the use of large acacia barrels and extended lees contact, a choice that delivers technical precision and a refined style. The result is a fresh and savory glass of wine, characterized by a persistent structure and a distinctly elegant profile.

Where it comes from

The roots of this white wine lie in the slopes of the Voglar vineyard, located in the Penon district in the Bolzano municipality of Cortaccia. The hilltop location provides a precise vine-growing origin, tightly linked to Alto Adige’s mountain context. The altitude and specific terroir conditions of this area allow the grape variety to develop a clear territorial identity. In this privileged setting, the grape’s character is enhanced by a fresh texture and a pronounced savory streak.

How it is produced

Production is based entirely on grapes selected and harvested at perfect ripeness between late September and early October. After pressing, the must undergoes a ten-day fermentation in large acacia wood barrels, a technical choice that ensures a very precise stylistic imprint. At the end of this phase, the wine rests on the lees for six months, followed by further bottle aging. This production process ensures greater structural complexity and a well-defined depth of flavor.

Tasting notes

In the glass, it shows an intense straw yellow color, a visual indication of a wine crafted with great care. The nose opens with a floral and delicate bouquet, where herbal notes perfectly integrate with citrus hints and a pleasant mineral sensation. On the palate, it is fresh and decidedly savory, driven by a harmonious and continual flavor progression. The finish delivers a long, clean persistence that faithfully echoes the aromatic impressions perceived on the nose.

Food pairings

This white wine naturally pairs well with seafood appetizers and first courses, enhancing dishes known for their defined aromas. It makes a perfect match with grilled fish, where its lively freshness and savory twist balance the typical smoky notes of the cooking. It also supports stewed fish recipes thanks to its solid flavor structure. It proves to be an ideal companion for fresh cheeses, as it cleanses the palate effectively without overwhelming the delicate milky flavors.

When to serve it

This is an ideal bottle for shared moments at the table, especially when the menu focuses on seafood flavors. Its solid balance between acidity, savoriness, and overall structure makes it suitable for starting the evening with a structured aperitif, as well as accompanying the entire meal. Thanks to the careful bottle aging before release, it arrives at the table perfectly harmonious. It can be appreciated from the very first sip, while maintaining a deep expressive consistency in the glass.
