Description
The Symposium is the most important Cru of Feudo Principi di Butera. It was born in the splendid vineyards of the Sicilian company, located within the municipality of Butera.
This wine is made from a skilful blend of Cabernet Sauvignon, Merlot and Petit Verdot grapes, harvested and selected manually and with meticulous care during the third week of September. The vinification takes place separately for single varieties in steel at controlled temperature with a maceration of 30 days. This is followed by malolactic fermentation immediately after racking. The maturation takes place for eighteen months in a 350 liter tonneau of first and second passage French oak wood.
It has an impenetrable ruby red color. The nose opens with an intense and elegant aroma of cherry jam, which is accompanied by pleasant vegetable notes and sensations of chocolate. In the mouth it shows a bursting structure, followed by a good acidity and smooth tannins. A wine symbol of Sicily, which reflects the terroir from which it comes in absolute fidelity and respect.
If stored well, this wine can also be drunk more than ten years after the harvest. Perfect with red meats and important dishes such as roasts. It also accompanies moments of meditation very well.
