Description
What kind of wine is it?
Pignatello by Barone di Serramarrocco is a red wine produced in Sicily, an authentic expression of the native grape variety of the same name. It is made from a careful selection of grapes grown on the estate, offering a faithful interpretation of the area between Erice and Trapani. Classified as Terre Siciliane, it stands out for its structured style and marked aromatic complexity. Fermentation takes place in steel tanks, followed by a long maceration on the skins to extract color and structure. Aging in medium-toast oak tonneaux completes the profile, giving the wine solid elegance and mature tannins ready for aging.
Where does it come from?
The roots of this label lie in the historic estate of Barone di Serramarrocco, located in the area between Erice and Trapani. Its origins date back to the seventeenth century, when King Philip IV of Spain granted the fiefdom to Antonio Marrocco y Orioles. Today, the property covers twenty-two hectares of vineyards at about three hundred meters altitude, in a breezy hillside area near the sea. This location ensures an ideal microclimate, with constant temperature swings that favor slow ripening of the grapes and richly enhance the aromatic profile of the bunches.
How is it made?
Production relies exclusively on grapes harvested in the renowned Vigna di Sammarcello, managed with high vine density and low yields to maximize fruit concentration. The cellar process begins with fermentation in temperature-controlled steel vats, combined with prolonged skin maceration. This phase is crucial for extracting the best polyphenolic components of Pignatello. The wine then rests for eighteen months in Allier oak tonneaux, a step that rounds out the varietal character and smoothly integrates wood notes into the final texture.
Tasting notes
In the glass, the wine appears bright ruby red with garnet highlights. The bouquet opens with clear aromas of small dark berries, followed by hints of vanilla, sweet spices, and licorice. On the palate it reveals a rich and substantial texture, supported by a mature tannic weave that leads to a harmonious sip. The finish, enveloping and with very long persistence, faithfully echoes the spicy hints of the nose and shows balanced development from the aging in oak tonneaux.
What does it pair with?
The structured character and polyphenolic richness make this red an ideal companion for meat-based dishes. Its gustatory profile naturally pairs with grilled meats, balancing the succulence of barbecue cooking with its freshness and tannic grip. It is also well suited to roast beef, where the spicy complexity and delicate aromatic return of the wine enhance the intensity of the dish. A carefully chosen pairing that brings out the interplay between the wine's structure and the juiciness of main courses.
When to serve it
This red is the right choice for important dinners and occasions where meat is the star of the table. The rigorous craftsmanship and long aging in tonneaux ensure not only immediate enjoyment but also a remarkable aging potential in the bottle, allowing the wine to further refine over the years. Serving it at the table on extended moments of conviviality lets you fully appreciate its evolution in the glass and enjoy a persistent finish that marks each course with precision and clarity.
