Description
The Rosso Rosso Sammarco di Castello dei Rampolla was born in vineyards cultivated in biodynamic agriculture, with great respect for the land.
It is produced 90% with Cabernet Sauvignon grapes, 5% with Sangiovese grapes and 5% with Merlot grapes, harvested between the months of August and September, then fermented for 10-12 days at a controlled temperature of 28-30 ° C. Subsequently the wine ages in barrique and tonneaux for about 12 months and, once bottled, it ages in the cellar for at least 20 months.
It has a ruby red color enriched with garnet reflections. The bouquet is enveloping, with hints of red fruits, in particular cherry and black cherry, and pleasant spicy nuances. On the palate it reveals a great structure, a rich consistency and a very long and persistent finish. Overall it is a warm wine, with an aristocratic character.
Recommended in combination with red meats and game, it is ideal for accompanying mature cheeses.
