Description

The white wine La Pietra comes from the vineyards of Tenute del Cabreo, within the municipality of Greve in Chianti. Originally created in 1983, it is the result of fermentation and ageing in wood, making it the Tuscan interpretation of a highly successful international style of white wine.

Made from Chardonnay grapes, it begins with the harvest around mid-September, followed by gentle pressing. After 24 hours of cold settling, alcoholic fermentation starts in French oak barriques, half new and half from the previous year, and lasts 15–20 days. Malolactic fermentation continues in the same barriques, followed by 12 months of ageing in oak barriques using bâtonnage, that is, stirring the fine lees and yeasts deposited on the bottom.

Characterised by a bright golden-yellow colour, La Pietra by Folonari offers a rich, intense bouquet. Spicy hints that recall vanilla blend pleasantly with notes of butter and peach compote. On the palate it is velvety, harmonious and complex, standing out as a happy marriage between the elegance and delicacy typical of white wines and the power and character of reds.

Ideal served with white-meat dishes, it is excellent with fish and shellfish and with vegetable-based pasta or risotto dishes.
