Description

Testamatta is a Tuscan red wine produced by Bibi Graetz exclusively from Sangiovese grapes grown in historic vineyards located in various renowned areas of Tuscany, including Chianti Classico and the hills around Florence; it represents a synthesis of tradition and creativity, expressing with purity and elegance the authentic character of this indigenous variety.

The winemaking process involves a careful manual selection of grapes harvested in several passes to ensure perfect ripeness, followed by fermentation with indigenous yeasts in open barriques without temperature control and frequent manual punch-downs; after about a week of maceration, the wine is transferred to wood for a long aging period that allows complete integration between structure and finesse.

It presents great intensity and aromatic complexity, with notes of wild berries such as blackberry and blueberry accompanied by delicate earthy hints and mineral nuances; on the palate, it is elegant and persistent, with velvety tannins and a refined texture that highlights balance, depth, and length of flavor.

It pairs perfectly with structured Italian cuisine dishes, such as red meats, roasts, and rich preparations.
