What kind of wine is it?

Testamatta by Bibi Graetz is a red wine made from Sangiovese grapes grown on the Florentine hills. Its character is marked by a structured and complex style, with fermentation in stainless steel tanks at controlled temperature and aging in oak barrels. This winemaking approach balances freshness and elegance, offering a harmonious ensemble with good aging potential. Where does it come from?

The grapes for Testamatta come from the vineyards of Fiesole, on terraces between 300 and 400 meters overlooking Florence. The Mediterranean climate, influenced by breezes from Monte Ceceri, ensures temperature variations that benefit ripening. The clay-limestone soils, rich in stones and galestro, provide structure and pronounced minerality. The territory of Fiesole offers ideal conditions for Sangiovese, resulting in wines with strong local character.

How is it produced?

Grapes are hand harvested in crates, selecting the best bunches. After destemming and gentle pressing, fermentation takes place in stainless steel at controlled temperature with daily punch-downs to extract color and tannins. After malolactic fermentation, the wine is aged for 16-18 months in second-use French oak barrels, with batonnage on the fine lees for extra complexity and texture. Bottling is done without heavy filtration, followed by a period of bottle aging.

Tasting notes

To the eye, Testamatta shows an intense ruby red color with violet hues. The nose reveals notes of cherry and black cherry, along with leather, tobacco, and sweet spices like vanilla and white pepper. On the palate, it is full-bodied and structured, featuring silky tannins, balanced acidity, and a savory backbone that supports the drink. The finish is persistent, with lingering fruit notes and a mineral edge that extends the closure.

Food pairings

Testamatta pairs well with roasted red meats, braised and stewed game, thanks to its structure and harmonious tannins. It's also excellent with aged cheeses like pecorino toscano and parmigiano reggiano, which complement the wine's leather and spice notes. It's perfect with Florentine-style steak, enhancing the meat's savoriness due to its acidity and mineral character. Also an intriguing match with a dark chocolate dessert for a pleasing contrast.

When to serve it

With solid structure and a balance between tannins and acidity, Testamatta has great aging potential, but it is also enjoyable young after a short period in the bottle. Serve in large glasses at 18 °C to bring out both primary aromas and those that develop during aging. This approach allows a pleasant synthesis of complexity and freshness.
