Testamatta by Bibi Graetz is a red wine made from Sangiovese grapes grown on the hills around Florence. Its profile stands out for a structured and complex style, with fermentation in temperature-controlled stainless steel and aging in oak barrels. This winemaking approach balances freshness and elegance, offering a harmonious palate with good aging potential. Where does it come from?

The grapes for Testamatta come from the vineyards of Fiesole, on terraces between 300 and 400 meters overlooking Florence. The Mediterranean climate, influenced by the breezes from Monte Ceceri, brings temperature swings beneficial for ripening. The clay-limestone soils, rich in stones and galestro, lend structure and a marked minerality. The Fiesole terroir offers ideal conditions for Sangiovese, resulting in wines with a strong local identity.

How is it produced?

The grapes are hand-harvested in crates, selecting only the best bunches. After destemming and gentle crushing, fermentation takes place in stainless steel at controlled temperature, with daily punch-downs to extract color and tannins. After malolactic fermentation, the wine matures for 16-18 months in second-use French oak barrels, with batonnage on fine lees for greater complexity and texture. Bottling is done with minimal filtration and followed by further bottle aging.

Tasting notes

On appearance, Testamatta displays a deep ruby red with violet hints. On the nose, notes of cherry and black cherry emerge, together with leather, tobacco, and sweet spices like vanilla and white pepper. On the palate, it is full-bodied and structured, with silky tannins, balanced acidity, and a savory texture that enhances its drinkability. The finish lingers, with returning fruity notes and a mineral streak that extends the aftertaste.

Food pairings

Testamatta pairs beautifully with roasts of red meat, stewed game, and braised dishes, thanks to its structure and harmonious tannins. Excellent also with aged cheeses like Tuscan pecorino and Parmigiano Reggiano, complementing the wine's leather and spice notes. Perfect with Florentine steak, as it enhances the meat's savoriness thanks to its acidity and mineral character. An intriguing match with dark chocolate dessert for a delightful contrast.

When to serve

With its solid structure and balanced tannins and acidity, Testamatta has excellent aging potential but remains enjoyable even when young after a brief bottle rest.
