Description

Toscana Rosso Cabreo Il Borgo was born in the Tenute del Cabreo, on the gentle slopes of the Greve in Chianti area. It is based on a happy combination, invented here in 1985, between Sangiovese grapes, of which it exalts the elegance and flavor, and Cabernet Sauvignon grapes, of which highlights the roundness and concentration.

Sangiovese grapes are harvested in the first half of October, while Cabernet Sauvignon grapes in the second half of the month, only by hand. Vinification takes place in the Tenute del Cabreo cellar, where the wine is placed in stainless steel wine vessels for fermentation at a controlled temperature of 28 ° for both vines. The wine is left to macerate on the skins for 15-18 days and then placed in thermo-conditioned stainless steel containers at a temperature of 22-23 C ° for malolactic fermentation. The two varieties are then combined and aged in French oak barrels, partly new, with decanting every 3 months, for a total period of 16-18 months. The wine is then bottled and undergoes another 6 months of aging.

It has a bright ruby red color and a noble and complete bouquet. The taste is aristocratic and velvety, with hints of undergrowth and nuances of leather and raspberry.

Perfect in combination with roasted meats and game, it is indicated to accompany aged cheeses.
