Description

What kind of wine is it?

Ferrari's Perlé Bianco is a Trento made exclusively from Chardonnay grapes grown in renowned mountain vineyards. This Classic Method is distinguished by a broad aromatic profile and an extremely fine perlage. Secondary fermentation in the bottle and subsequent extended maturation significantly enhance its structure and intensity. The final result is a sparkling wine with an intrinsically fresh and savory style.

Where does it come from?

This sparkling wine originates in the most suitable areas of Trentino and comes from carefully selected high-altitude vineyards . The altitude provides an ideal natural environment for the maturation of Chardonnay , a condition that allows the vine to preserve precious reserves of freshness. The influence of the Alpine climate gives the grapes the strength needed to withstand a long rest. The result is a taut and profound sip that reflects the terroir.

How it is produced

Production begins with a rigorous selection of grapes in the vineyard, carefully chosen to withstand prolonged processing. Once the white vinification is complete, the wine undergoes secondary fermentation , faithfully following the rules of the Classic Method . The most significant phase involves a period of over 96 months on the lees , which profoundly shapes its olfactory complexity and promotes a slow evolution to maintain its structural integrity.

Tasting notes

In the glass, it displays a straw yellow color, evident golden highlights , and a very persistent perlage. The nose reveals a varied bouquet featuring clear aromas of candied citron and quince , combined with floral notes and delicate hints of spiced bread. The palate is marked by an orderly progression. The consistent finish fades slowly and leaves evocative notes of white pepper and dried apricot.

What does it pair with?

This bottle is magnificent as a sparkling wine for all meals and pairs effortlessly with fish and shellfish dishes. Its remarkable persistence pairs naturally with recipes where marine sensations meet the complex structure provided by yeasts. It is ideal with a seafood risotto or traditional spaghetti with clams , enhancing each ingredient without overpowering their flavors.

When to serve it

This is the perfect glass for those seeking a sparkling wine that can seamlessly accompany an entire meal . Careful selection in the vineyard and a long aging on the lees provide a solid structure. It's a smart choice for both immediate consumption and a wine that will evolve peacefully over time in the cellar. The passing of the years will preserve the precision of its flavor profile.
