Bramìto della Sala by Antinori is a structured white wine made from Chardonnay grapes grown in Umbria. Fermentation takes place partly in oak barrels and partly in stainless steel at controlled temperatures, thus preserving its freshness and aromatic precision. The style combines body and liveliness, offering a versatile profile suitable for those seeking a white with both personality and immediacy alongside balanced complexity.
Where does it come from
Bramìto della Sala is produced from vineyards surrounding the Castello della Sala in northern Umbria, at altitudes between 200 and 350 meters. The continental climate with Mediterranean influences encourages full aromatic ripeness of the grapes, while the calcareous clay soils provide drainage and marked minerality. This area, with its historic vocation for viticulture, enables wines that combine structure and finesse.
How is it produced
The Chardonnay grapes are hand-harvested at the beginning of September, with careful selection of the bunches. After a brief period of cold maceration, fermentation takes place both in French oak barrels and in stainless steel tanks at 16–18 °C. Malolactic fermentation takes place only in the wood-aged portion to soften acidity and enrich the texture. The final blending and bottling occur without excessive filtration, thus preserving the wine’s identity.
Tasting notes
In the glass, Bramìto della Sala shows a straw yellow colour with greenish highlights. The nose reveals aromas of ripe exotic fruits like lychee and mango, with citrus notes of pink grapefruit and citron. Ageing in wood brings subtle hints of vanilla and toasted hazelnut. On the palate, it is well balanced, with lively acidity and a savoury texture that supports the wine’s persistence. The finish remains harmonious, with returning fruit flavours and a toasted touch.
Food pairings
This Chardonnay pairs well with Mediterranean pasta dishes, such as vegetable risottos, and with white meats stewed, for example chicken cacciatore. In Umbria, it is typically paired with torta al testo alle erbette. Nationally, it works well with warm seafood salads, where the dish’s saltiness enhances the wine’s freshness and structure.
When to serve it
Bramìto della Sala best expresses its qualities within the first few months after bottling. It is ideal to consume within 3–4 years to enjoy its freshness and acidity, but its good structure and moderate wood notes also allow it to be enjoyed up to 5 years from production, a period during which the wine develops greater complexity without losing liveliness.
