Description

What kind of wine it is

Bortolomiol’s Valdobbiadene Prosecco Superiore is a white sparkling wine made from grapes selected between Conegliano and Valdobbiadene. Its expressiveness comes to life through white vinification and re-fermentation in autoclave, processes that shape its aromatic profile. The style is lively, fresh and harmonious, driven by juicy fruit and a salty finish. The choice of Extra Dry dosage reflects local custom, as it offers a touch of residual sugar able to balance the vibrant acidity.

Where it comes from

The appellation Valdobbiadene Prosecco Superiore unfolds across a small hilly area along the pre-Alpine belt. The vineyards are planted on steep, precipitous slopes, a topography that demands careful manual work. The microclimate benefits from good sunshine while remaining cool, and is characterized by marked diurnal temperature shifts between day and night. This balance favors slow ripening, giving the grapes a rich aromatic profile and setting the production apart from the norms of the plains.

How it is made

The grapes come from the best parcels tended by Bortolomiol. After harvest, the process begins with white vinification aimed at preserving the must’s aromatic integrity. The subsequent secondary fermentation in autoclave is the technical core of the process, allowing the wine to fix its aromas and develop a fine perlage that is continuous. The final result balances natural acidity, the fruit component and a delicate touch of sweetness.

Tasting notes

In the glass it shows a bright straw yellow color, with faint greenish highlights and a continuous perlage. The bouquet releases delicate floral aromas and suggestions of white fruit. On the palate, the entry is lively, paced by vibrant acidity that supports the fruit expression. Subtle roundness guides the progression on the palate, fading into a salty finish that is linear and of good persistence.

Food pairing

The balance between softness and vibrancy makes this sparkling wine ideal for the aperitif and for enhancing light appetizers. Its aromatic structure supports vegetable-based first courses well, where the wine counteracts the natural sweetness of the ingredients. Regionally, it pairs beautifully with traditional dishes such as sarde in saor or Baccalà mantecato. Among seafood classics, the traditional fritto misto di paranza is a perfect match, in which the effervescence readily lifts the lively sip.

When to serve it

This sparkling wine shows its potential when you want a glass that combines pleasure with a clear sense of place. Its characteristics suggest serving it on informal occasions and convivial moments, as a reliable reference for those who favor precision on the palate. Thanks to the signature of re-fermentation, the wine keeps its fragrance intact and proves flexible both as an opener and throughout the meal, provided it is paired with light courses that favor its nimble drinkability.
