Description
The Cave Mont Blanc winery is an icon of the wine-growing Aosta Valley and its Extra Brut Glacier is proof of this.
It comes from the slopes of Morgex, when the beautiful Aosta Valley is about to give way to neighboring France. It consists of 100% Prié Blanc grapes, the only indigenous white grape variety in the region. The vine growing system here is that of the low pergola, sometimes even very low. This happens to cope with the very harsh temperatures that can be reached in this point of the valley and allow the vine to benefit as much as possible from the heat transfer made by the soil. The alcoholic fermentation of the base wine to obtain this Extra Brut takes place in both steel and wooden containers. In the second phase, in which the wine referments in the bottle, the stay in contact with its yeasts is not less than 16 months and can even reach 20.
Straw yellow, at sight, with a lively perlage. The nose is fruity in its flavors of apple, white peach and a more pungent note of medlar; the dried fruit and the background of the bakery give the nose creaminess. The same also emerges in the mouth, determining the softness of the sip in perfect balance with the fresh-savory trait. It closes in a beautiful persistence of the fruit.
To be combined with a salmon fillet on cauliflower cream.
