Description
Gerardo Cesari's Valpolicella Classico is a red wine produced with a blend of Corvina, Corvinone, Rondinella, and Molinara grapes. The vineyards extend over various areas of the Valpolicella Classica in Veneto and are cultivated on calcareous soils of alluvial-morainic origin.
The production begins with the harvest of the grapes between September and October, followed by vinification in red. The grapes macerate on the skins for 10 days to extract intense colors and aromas. Subsequently, the wine undergoes malolactic fermentation and remains in stainless steel tanks for at least 4 months before bottling. After a brief rest in the bottle, the resulting wine is ready for the market.
This wine presents a ruby red color with violet reflections. The aroma is fresh and fruity, with clear notes of wild berries and cherry. On the palate, it is dry, velvety, and well-balanced, with a pleasant harmony between acidity and tannins.
This Valpolicella Classico is the ideal accompaniment to pasta dishes with meat sauce.
