Valpolicella Ripasso by Dal Moro is a red wine made from the typical grapes of Valpolicella. It is produced using the ripasso technique on the Amarone pomace, which gives the wine a solid structure and a complex aromatic profile. Fermentation in stainless steel and subsequent aging in wooden barrels contribute to a balanced freshness and elegant texture, making it suitable for those looking for a characterful yet approachable red wine.

Where does it come from

This wine comes from the historic Valpolicella area, in the province of Verona. The vineyards are located between 250 and 450 meters above sea level, on clay-limestone soils that favor minerality and balance. The region’s long-standing viticultural tradition is evident in the wine’s quality and identity.

How is it produced

The grapes are hand-harvested at the beginning of October, with only the best bunches selected. After destemming, the must ferments in stainless steel at a controlled temperature. The wine is then subjected to ripasso on Amarone pomace and remains in contact with the skins for greater extraction of color and tannins. Aging continues in wooden barrels, followed by maturation in stainless steel and bottle aging, resulting in stability and aromatic complexity.

Tasting notes

To the eye, Valpolicella Ripasso shows an intense ruby with garnet highlights. The aroma is ample, with notes of ripe cherry, plum, and sweet spices such as vanilla and black pepper. On the palate, it offers a medium-full body, soft tannins, and lively acidity balancing its structure. The finish is persistent, with hints of toasted notes and a touch of dark chocolate.
