Description
The Valpolicella Ripasso Superiore from the Pasqua Family originates from the eastern area of Valpolicella, expressing the characteristics of this dedicated territory at its best. The blend consists of Corvina, Rondinella, Corvinone, and Negrara, varieties that give the wine structure, balance, and an intense and enveloping aromatic profile.
The winemaking process involves a 15-day maceration on the skins with controlled fermentation between 20-24°C. The wine then rests in steel until February, when it is passed over the pomace of Amarone, initiating a second fermentation that enriches its body and aroma. After racking, the wine matures for a few months in barrique before the final aging in the bottle.
Visually, it presents a deep and intense red color. The bouquet is broad and enveloping, with hints of morello cherry, blueberry, and currant, followed by notes of licorice and toasted nuances. On the palate, it is rich, warm, and soft, with smooth and well-integrated tannins that enhance its structure. The finish is long and persistent, revealing all the complexity of the wine.
This Valpolicella Ripasso pairs perfectly with hearty dishes such as pappardelle with hare, beef braised, grilled meats, and polenta with sausage, enhancing the flavors with its softness and aromatic intensity.
