Description
The Valpolicella Superiore Mizzole by Cecilia Beretta, a brand of the Pasqua winery, is a refined and elegant red wine, produced from selected grapes sourced from vineyards located 200 meters above sea level in the Mizzole area of Valpantena. The clay-limestone soil and organic conversion farming contribute to enhancing the authenticity of the area and the complexity of the wine.
After a soft pressing, the grapes macerate on the skins for 8-10 hours at low temperatures, followed by a controlled fermentation lasting 10-12 days with frequent pump-overs. The wine undergoes malolactic fermentation in stainless steel and then ages for about 9 months in oak barriques and tonneaux for 55%, while the remainder matures in stainless steel, ensuring a perfect balance between structure and freshness.
With a bright color and coral red reflections, it exudes an intense and complex bouquet, with aromas of small red fruits like currants and wild strawberries, accompanied by aromatic herbs and a spicy finish with notes of cinnamon. On the palate, it is harmonious and velvety, characterized by lively freshness, silky tannins, and a long persistence.
This Valpolicella Superiore is perfect with flavorful first courses, roasted white meats, and medium-aged cheeses, enhancing the structure with its finesse and elegance.
