Description
The Cabernet Sauvignon Fear No Dark by Pasqua originates from an iconic vineyard located in Montevegro, between Val d’Illasi and Val di Mezzane, at an altitude of 350 meters. The grapes come from a single plot of a few hectares, characterized by a north-eastern exposure that ensures a cooler microclimate, influenced by the winds from the Lessini Mountains. The basaltic and limestone soil imparts minerality and depth to the wine, while the blend is primarily composed of Cabernet Sauvignon with a small percentage of Oseleta.
The grapes are hand-harvested with careful selection and subjected to a gentle pressing. Fermentation takes place at a controlled temperature between 20 and 22°C, with a skin maceration of about 20 days. After malolactic fermentation in steel, the wine matures for 16 months in new French oak tonneaux and barrique, imparting structure and aromatic complexity.
On the nose, intense notes of small black fruits and berries emerge, accompanied by herbal nuances and hints of underbrush. On the palate, it is dry and enveloping, with silky tannins and a perfect balance between freshness and smoothness. The long finish reveals elegant nuances of strawberries, currants, and a light smokiness.
This red wine pairs perfectly with grilled meats, roasts, and spicy dishes, enhancing their structure with its intense and harmonious aromatic profile.
