Description
The Extra Brut Rosé Sparkling Wine Ziik from Tenuta Casenuove comes from the hills surrounding Greve in Chianti, made from Sangiovese grapes and produced using the Charmat method.
Harvest of the Sangiovese takes place in the weeks spanning late August to early September. Once in the winery, the grapes undergo gentle pressing, constantly monitored through tastings aimed at tracking the evolution of acidity to determine the most favorable moment to stop the press. This is followed by cold, static settling of the must obtained without any additives and its subsequent alcoholic fermentation at controlled temperature in stainless-steel tanks. After more than 5 months on the lees, the wine is bottled.
In the glass the wine appears pale pink with a fine and persistent perlage. On the nose it offers floral aromas of rose and fragrant red fruits of redcurrant and wild strawberry. The palate is lively, fresh, and saline.
This rosé “Charmat method” sparkling wine pairs well with raw seafood and meat appetizers, fresh cheeses, and cured meats.
