Description
What kind of wine it is
Zapallar Pinot Noir Outer Limits by Montes is a red wine made from Pinot Noir grown in Zapallar, Chile, near the Pacific Ocean. The style remains fresh and elegant, with a light body and a juicy texture. Vinification includes fermentation at a controlled temperature with gentle pump-overs and 12 months of aging in French oak, with a portion of first-use barrels. Malolactic fermentation then continues in concrete, supporting a crisp and smooth profile.
Where it comes from
The grapes come from vineyards in Zapallar, about 7 km from the Chilean Pacific coast. The proximity to the ocean and the influence of the Coastal Range contribute to a cool climate, which favors acidity and aromatic finesse. The soils, of granite origin with the presence of clay, silt, and surface gravel, lend the wine a mineral character and unique typicity, with clean fruit and balanced earthy undertones.
How it is produced
Harvesting takes place manually in the early morning, followed by a double grape selection. To broaden the aromatic profile, different techniques are alternated, including cold maceration on destemmed grapes and the use of whole bunches treated with dry ice. Fermentation occurs at controlled temperatures with gentle pump-overs, to achieve targeted extraction. Aging continues for 12 months in French oak, while malolactic fermentation takes place in egg-shaped concrete vats.
Tasting notes
In the glass, it shows a bright, youthful ruby red with the transparency typical of the grape variety. On the nose, aromas of raspberry, cherry, and strawberry are perceived, followed by hints of damp earth, flowers, and aromatic herbs. The oak lends subtle, well-integrated nuances. On the palate it is fresh, light, and juicy, with consistent flavor and aroma and a linear progression. The finish is elegant and silky, with a clean closure that enhances its mineral component.
Pairings
It naturally pairs with fish dishes, especially simple preparations that preserve its freshness. Its light body and delicate finish also make it suitable for salads and cheeses, where its juicy texture accompanies without weighing down and lets the red fruit and herbal notes shine through.
When to serve it
It is recommended when you want a fresh-climate red, agile and precise, suitable for an informal lunch or a dinner focused on drinkability. The light structure highlights the clarity of the red fruit and aromatic herb notes, while the aging in French oak and time in concrete support a measured harmony to be enjoyed in the short term.
