Château Canon
Château Canon is an estate in Saint-Émilion that rises on the heights of the famed limestone plateau overlooking the right bank of the Dordogne, a stone's throw from the village of Saint-Émilion, listed as a UNESCO World Heritage site. A luminous place of blond stone and vineyards best explored on foot, where terroir reigns supreme.
The soil has a dual nature: a mass of porous limestone, rich in marine fossils such as shells, starfish and oysters, which absorbs rainwater and encourages slow, even ripening of the grapes, and thousands of clay veins that retain water and bring freshness to the wines. Beneath the surface lie ancient limestone quarries.
The vineyard is composed of Merlot (62%), which brings fruit, softness and fullness, and Cabernet Franc (38%), which contributes structure, tension, freshness and length. Work in the vineyard is meticulous and respectful of the soils, and in the cellar pump-overs are performed by hand for gentle, even extraction.
To express a demanding terroir, vintage after vintage, is the ambition that guides Château Canon, a refined interpreter of Saint-Émilion’s limestone plateau.
