The history of Trentodoc begins with Giulio Ferrari, oenologist at the Agricultural Institute of San Michele all'Adige, who during one of his trips to France found some elements of similarity between the Champagne area and Trentino, such as to push him to produce sparkling wine. classic method in this region. From this experimentation one of the most prestigious brands of Italian wine was born, which over time have joined many other producers.

Trentodoc can be defined as a mountain sparkling wine owing to the vineyards cultivated up to 800 meters above sea level much of its charm. A classic method that includes four grape varieties for the production of a fine sparkling wine suitable for every occasion: Chardonnay, with its freshness and aroma is, Pinot Noir, prominent protagonist for body and density and, less used, Pinot Blanc and Pinot Meunier.

It can be produced in the white and rosé type, and the minimum stay on the lees must be at least 15 months, which rise to 24 for the Millesimato and 36 for the Riserva. Depending on the residual sugar it can be defined as non-dosed (or zero dosage), extra brut, brut, extra dry, dry (or sec) or demi sec. Perfect as an aperitif, it is ideal to accompany first courses based on fish and vegetables without hesitation.
