Carbonara pasta is one of the typical dishes of the great popular tradition of Lazio and Roman cuisine in particular. It is a tasty and very tasty first course which, like all the poor dishes of our cuisine, is based on a few simple ingredients : spaghetti, eggs , pork cheek , pecorino romano and pepper. To choose a wine to pair with carbonara we must first take into consideration the fundamental characteristics of the ingredients.

The pasta has a slightly sweet tendency , the egg expresses a certain soft fatness , the bacon is very tasty and oily , the pecorino romano has an intense and savory taste and the pepper gives a touch of spicy pungency. The set of characteristics of the ingredients recommends the combination with a white wine of balanced freshness , aromatic enough intense , with a harmonious mouth center and a finish of good gustative persistence .

Having traced the general identikit, we now try to identify the most suitable wines to bring to the table with a plate of carbonara. The easiest and most obvious choice is the territorial one, with a Frascati Superiore , which thanks to the classic blend of Trebbiano and Malvasia, perfectly expresses the required characteristics. A valid alternative to Frascati can be found in a great wine from central Italy, which can offer a good pairing with a tasty dish like carbonara: it is Orvieto Classico , one of the oldest and richest white wines in our peninsula. Another white that has all the requisites to marry perfectly with a carbonara pasta dish is Soave Classico , produced with the indigenous Garganega grape, balanced, rich and savory. Without moving far from Verona, we find another wine that thanks to its harmony and good complexity can accompany a good carbonara. It is the Custoza Bianco, an assembly of Garganega, Bianca Fernanda (Cortese) and Trebbianello (Friulano).

With carbonara we absolutely do not recommend red wines, too powerful, persistent and tannic for a dish with these characteristics. However, if you are looking for an alternative to a still white wine, you could opt for a Classic Brut Method sparkling wine , fresh, savory and with a harmonious fruit, which also thanks to the effervescence, will help cleanse the palate perfectly. A Franciacorta will be perfect. If, on the other hand, you love rosé wines, we recommend you try a claret from Valtènesi , which with its floral notes, its delicate fruit and its fresh and savory finish, will be able to match the dish well.
