Spring is approaching and with the warm season the desire to go outside to enjoy the first warmth grows. We finally leave behind a cold winter to begin enjoying the mild evenings with friends, which from the moment of the aperitif pleasantly extend until dinner time and beyond. The arrival of a new season also brings with it a change in eating habits, with lighter and more fragrant dishes, less rich and structured. Obviously, a change in the menu also leads to an adjustment in the choice of wines as a natural consequence. The dishes of spring cuisine ask for combinations with fresher, fragrant and lighter wines, less rich and structured. Among the whites we will gladly drink wines with a floral and fruity face, characterized by good freshness and pleasant final flavor. As for the reds, we will rarely taste powerful, tannic, structured and aged wines in wood for a long time. Instead, we will prefer red wines aged only in steel or perhaps with a short passage in wood, which does not change the varietal trait. Medium-structured wines, with a slender and fruity profile, capable of finding excellent combinations with savory first courses, white meats, rock fish with tomato, stew or soup. Any suggestions? Among the whites, Pigato, Vermentino dei Colli di Luni, Arneis, Muller Thurgau, Chardonnay, Sauvignon Blanc, Passerina, Falanghina, Inzolia and Grillo. Let's not forget the rosé wines, excellent wines to taste in this season of the year, with the refined and elegant Rosé, of Provencal style, in the area of Lake Garda in the front row: Valtènesi and Bardolino Chiaretto, or the more vertical and sharp ones of the 'Etna. Among the red wines the choice is wide. From young and fruity Pinot Noir from South Tyrol, to Rossese di Dolceacqua, to Frappato di Vittoria, to South Tyrolean Schiava, to Sangiovese di Romagna. Spring is also in perfect harmony with sparkling wines, from Prosecco Superiore Brut from Conegliano and Valdobbiadene, to the Classic Method Franciacorta and Trento Doc.
