Description
Vigne Rade de La Toledana is a Gavi del Comune di Gavi made exclusively from Cortese grapes in the Gavi area, in Piedmont. The grapes are hand-harvested into crates, as part of the Vigne Rade project, which aims to respect the natural characteristics of the terroir and the vineyard; owing to its natural conformation, there are areas where the rows are more widely spaced and the plants’ fruit draws greater nourishment.
Winemaking involves static settling of the must, followed by low-temperature fermentation in stainless steel for 15 days. This ageworthy white then continues its maturation exclusively in stainless steel for 25 days, to preserve all the natural complexity of Cortese.
Bright pale straw yellow with greenish highlights. On the nose it offers aromas of white fruit and flowers, accompanied by citrus notes. On the palate it is dry, refined and well-balanced, marked by freshness and good length, with a slightly almondy finish.
Excellent as an aperitif, it pairs with the finest fish dishes, pasta dishes with light sauces, ravioli di Gavi, white meats and goat’s cheeses.
