It is produced with Sangiovese, Canaiolo and Colorino grapes, harvested at the beginning of October. The fermentation is spontaneous and takes place in temperature-controlled raw concrete vats. After malolactic fermentation, it is aged in large, unroasted French Allier oak barrels for about 14 months, and then in bottle for a further 3 months before being released.
