Dolcetto Nibiô 2013 Cascina degli Ulivi
Description
The Dolcetto di Monferrato Nibiô of Cascina degli Ulivi comes from vineyards cultivated in biodynamics, located in the municipality of Novi Ligure, in the province of Alessandria.
A clone of Dolcetto grapes with red stalk is obtained exclusively from the Nibiô variety, manually harvested in small boxes. After a short maceration on the skins, alcoholic and malolactic fermentation follows, which take place spontaneously in oak barrels. The wine ages on the lees for 12 months in the same barrels, before moving on to bottling.
It is characterized by an intense ruby red color. On the nose it is vinous and floral, with fresh hints of red fruit. In the mouth it is elegant and sapid, with a long finish.
It goes ideally with Ligurian first courses and baked pasta. Also recommended in combination with poultry.
