Description
Miràll is a Brut sparkling wine made from Torbato grapes grown in the calcareous soils of Alghero, a result of millennia of marine sedimentation. This rare and precious variety has been recovered and enhanced by Sella & Mosca after years of study and selection, and today it is the star of a sparkling wine with great personality, a perfect expression of the territory and the sparkling wine tradition of Sardinia.
The vinification involves gentle pressing of the grapes selected for their acidity, cold static decantation and fermentation in stainless steel at a controlled temperature. The second fermentation takes place in an autoclave using the cuvée close method, followed by two months of aging on the lees which contributes to giving structure, finesse, and aromatic complexity.
It appears a brilliant straw yellow in the glass. On the nose, it opens with notes of acacia flowers, pink grapefruit, noble yeasts, and bread crust. On the palate, it offers a creamy and enveloping texture, with vibrant acidity and a dry, vertical finish, enhanced by a persistent iodized trail and continuously evolving balsamic aromas.
Excellent when paired with fish appetizers, sushi, or light fried foods, enhancing the freshness and delicacy of the dishes.
